Tasty Thursday-Good Fat Peppermint Patties

I’m really loving peppermint at the moment and with more savory hot dishes for dinners and then my omelette for breakfast each day I feel like something sweet (I have a huge sweet tooth and have since I was about 3) so started drinking green tea with peppermint and it is so refreshing and was perfect. I find though as we get into winter I do slack a little bit on my good fat intake so using what we have left in the cupboards before we move house I have made these treats and allow myself one a day.

Ingredients:
White layer:
3/4 cup of coconut butter
3 tablespoons of coconut oil
1/4 cup of shredded/desiccated coconut
2 teaspoons peppermint essence

Dark layer:
2 tablespoons coconut oil
2 tablespoons of dark chocolate chips
Here is how to make them.
In a bowl melt the coconut butter and oil together. Mix the coconut and peppermint essence into the melted butter and oil. Pour the mixture into silicone cupcake molds or ice-cube trays to just below half way. Place these in the fridge for 15 minutes to set.

In another bowl melt the coconut oil and chocolate chips and mix well. Spoon on top of the white layer and place back into the fridge to set. Pop them out of the molds and keep refrigerated in an air tight container.
